Preheat the oven to 150°C (top/bottom heat).

Melt the butter, golden syrup and sugar in a saucepan over medium heat until the sugar dissolves.

Mix the dry ingredients, including the Oatmeal Spice. Beat the egg with the milk and the ginger. Add the butter mixture and the egg milk to the dry ingredients. Mix everything thoroughly but quickly with a wooden spoon.

Grease a square baking tin (22 cm) with butter. Pour in the batter and bake for about 45 minutes. Test to see whether it’s done with a skewer.

If you prefer, wrap up tightly with reusable cling film after cooling and store for a few days to make it extra sticky. It can also be eaten straightaway.
