Roughly chop the white chocolate. Melt the butter in a saucepan over a low heat. Add the white chocolate to the melted butter and stir until it has completely melted.

Add the cream and stir well until the mixture is smooth. Stir the crumbled digestives, almonds and Speculoos Spice into the chocolate mixture.

Line a loaf tin (20 × 10 cm) with baking paper.

Pour the chocolate mixture into the prepared mould and ease into the corners with a spatula. Smooth down the top.

Allow the nougat to set in the refrigerator for at least 2 hours. After cooling, remove the white chocolate spiced nougat from the mould and cut into 12 pieces. Try not to eat it all at once.
