Peel and dice the watermelon and cucumber. Wash the pepper, cut in half and remove the seeds and innards carefully with a knife. Peel and finely chop the onion and garlic.

Wash the basil leaves and pat dry.

Place the watermelon, cucumber, pepper, onion, garlic and basil leaves in a blender and puree until smooth.

Add the red wine vinegar and olive oil and blend again until everything is well combined.

Season the gazpacho with the Mediterranean Vegetable Allrounder. Pour into a large bowl and chill in the fridge for at least 1 hour to allow the flavours to combine.

Stir well and season to taste before serving.


Tip: Garnish with croutons and diced cucumber, watermelon and basil leaves.
