󠀰Season the veal with salt and pepper.󠀲󠀣󠀠󠀧󠀩󠀳󠀰 Quarter the onion and roughly chop the carrot and celery stalk.󠀲󠀣󠀠󠀨󠀠󠀳

Bring a large pot of water to a simmer and add the meat.󠀲󠀣󠀠󠀨󠀡󠀳󠀰 Add the onion, carrot, celery, bay leaf and peppercorns.󠀲󠀣󠀠󠀨󠀢󠀳󠀰 Simmer over a very low heat for 1 hour (do not allow it to boil too hot!) or until the internal temperature measures 63°C with a meat thermometer.󠀲󠀣󠀠󠀨󠀣󠀳󠀰 Remove the pot from the heat and leave the meat to cool in the liquid. When cool, cut the meat into thin slices.󠀲󠀣󠀠󠀨󠀤󠀳

󠀰To make the tuna sauce, place the tuna, anchovy fillets and capers in a blender.󠀲󠀣󠀠󠀨󠀥󠀳󠀰 Add the lemon juice and the Fish Allrounder, and blend everything until smooth.󠀲󠀣󠀠󠀨󠀦󠀳󠀰 Stir in the mayonnaise and season with salt and pepper to taste.󠀲󠀣󠀠󠀨󠀧󠀳

󠀰Arrange the veal slices on a platter.󠀲󠀣󠀠󠀨󠀨󠀳󠀰 Spread the tuna sauce evenly over the meat.󠀲󠀣󠀠󠀨󠀩󠀳󠀰
