    wheat tortillas (around 15 cm in diameter)

    sweet potato
  • 250 g
    cherry tomatoes
  • 1
    avocado
  • 2
    romaine hearts
  • 2 tbsp
    olive oil
  • For the sauce:

  • 1
    lime
  • 250 g
    natural yoghurt
  • 3 pinches
    salt

Preheat the oven to 200°C.

Peel the sweet potatoes and cut into approximately half-centimetre cubes. Place in a bowl, mixing in the olive oil and 4 pinches of Mild Fajita Mix.

Spread the sweet potato cubes on a baking tray and bake in the oven for around 15 minutes until crispy. Two minutes before the baking time is up, moisten the tortillas and place in the oven with the sweet potato cubes.

In the meantime, wash the cherry tomatoes and cut into quarters. Halve the avocado, remove the stone, peel and finely chop. Cut the romaine hearts in half, wash, remove the stalk and finely slice.

For the sauce, cut the lime in half and squeeze out the juice. Mix the lime juice with the yoghurt in a bowl and a pinch of salt.

Place the roasted sweet potato cubes in a bowl and mix in the chopped tomatoes and avocado. Add the remaining olive oil and season with 4 pinches of Mild Fajita Mix. Layer the salad on the warm tortillas, place the vegetables on top and finally top with yoghurt. Then roll tightly.
