    quinoa
  • 1
    red onion
  • 4 tbsp
    olive oil
  • 3 tbsp
    crushed linseeds
  • 50 g
    rolled oats
  • 1 tin
    kidney beans (400 g)
  • 1 tbsp
    tomato puree
  • For the burger:

    vine tomato
  • 1
    red onion
  • 4
    lettuce leaves
  • 4
    burger buns
  • 4 slices
    cheddar cheese

For the burgers, prepare the quinoa according to the pack instructions.

Peel and finely chop the onions. Heat 2 tbsp olive oil in a frying pan and sauté the onions for around 3 minutes until translucent.

Add the linseeds to a small bowl, cover with hot water and leave to soak for 10 minutes.

Place the rolled oats into an electric mixer and grind to a fine powder.

Drain the kidney beans in a colander and rinse under cold water. Add the quinoa, linseeds, onions, tomato puree and BBQ Seasoning to the ground oats and blend for a few seconds.

Form the mix into 4 burger patties and place in the fridge.

Wash, core and slice the tomato. Peel and finely slice the onion. Wash the lettuce and dry with a salad spinner.

Cut the avocado in half, remove the stone and scoop out the avocado with a spoon. Place the avocado in a bowl with 1 tbsp oil and mash with a fork.

For the burger sauce, finely chop the gherkins and stir into the remaining ingredients in a bowl. Keep chilled until required.

Heat the remaining olive oil in a frying pan and fry the patties for 5 minutes on each side over a medium heat. Then place a slice of cheddar cheese over each and allow to melt.

Slice the burger buns and toast as required.

Spread the bottom half of the bun with the avocado. Layer with lettuce, onion rings and tomato and place the burger patty on top. Spread some sauce on the burger and top with the other half of the burger bun.
