Peel and finely chop the onion and garlic. Wash the red pepper, remove the seeds and chop into 2 cm pieces. Cut the broccoli into florets and place in a bowl with the red pepper.

Heat the olive oil in a frying pan and gently cook the vegetables for around 5 minutes.

After 5 minutes, add the tomatoes and season with 6 pinches of Mediterranean Vegetable Allrounder and 3 pinches of turmeric. Cook for another 2 minutes. Add the vegetable stock and allow to simmer for 5 minutes over a medium heat.

Add the paella rice and simmer over a gentle heat for a further 15 minutes. Once the rice is cooked, remove the paella from the heat, cover and leave to rest for 5 minutes.
