  • 1 tsp
    vanilla extract
  • 2 tbsp
    amaretto
  • 1 pinch
    salt

  • In addition:

  • 300 ml
    cold strong coffee
  • 50 ml
    amaretto

Preheat the oven to 180°C (top/bottom heat).

Make the sponge base. Mix the flour, sugar, sunflower oil, water and baking powder together until smooth. Spread evenly onto a baking tray to about an inch thick.

Bake for 20 minutes and then leave to cool. Cut into pieces the size of sponge fingers.

Now make the cream. Combine the soy cream, water, sugar and semolina in a pan and bring to the boil, stirring constantly. Simmer for 3 minutes.

Remove from the heat and continue to stir carefully to stop lumps from forming.

Add the lemon zest, vanilla extract, Coffee Kiss, 2 tbsp of amaretto and the salt, and stir thoroughly.

Place the mixture in the fridge for 1 hour, stirring occasionally.

Beat in the margarine until you have a creamy consistency.

Mix the coffee with 50 ml of amaretto and pour into a shallow bowl.

Dip the sponge fingers into the coffee mixture and layer into a small glass dish (20 × 20 cm).

Spread half of the prepared cream on top, then add another layer of sponge fingers, and finally the remaining cream.

Dust with cocoa powder and place the dish in the fridge for at least 5 hours before serving.
