Peel the carrots and cut lengthways into strips using a peeler.

Boil the carrot strips in salted water for 2–3 minutes, then rinse in cold water and drain.

In a separate small bowl, whisk together the smoked salt, soy sauce, olive oil, maple syrup and apple cider vinegar.

Pour the marinade over the carrots in the mixing bowl. Stir well to ensure that all the carrot strips are covered with the marinade.

While the carrots are marinating, toast the inside of the bagel halves in a pan until golden brown.

Take a toasted bagel half, spread it with sour cream and place a generous amount of the carrot “salmon” on top. Garnish with the Sandwich Seasoning.

Repeat with the remaining bagel slices and the carrot “salmon”.

Serve the bagels with the “salmon” immediately and enjoy!
