    white or wholemeal bread
  • 6 tbsp
    pesto, vegan
  • 100 g
    sun-dried tomatoes
  • 4 pinches
    salt

Preheat the oven to 200°C.

Wash and slice the courgette and aubergine. Wash and deseed the peppers and cut them into bite-sized pieces.

Put the vegetables in a bowl and marinate them with the olive oil and salt. Then spread them out on a baking sheet and roast for 25 minutes.

Drain the artichokes and roughly chop them. Wash the lettuce and spin dry.

Toast the bread until golden brown, spread with the pesto and top with the lettuce, artichokes and tomatoes. Then add the grilled vegetables on top, garnish with the Sandwich Seasoning and finish with another slice of toast. Press together lightly.
