    tofu, natural
  • 1
    onion
  • 1 tin
    chickpeas
  • 1 bunch
    chives
  • 1 tbsp
    mustard
  • 100 g
    vegan mayonnaise
  • 4 slices
    bread of your choice
  • 3 pinches
    turmeric
  • 4 pinches
    salt

Wrap the tofu in kitchen paper, weigh it down under a large saucepan and leave for 10 minutes.

In the meantime, peel the onion and dice it finely. Mash the chickpeas with a fork. Cut the drained tofu into little cubes. Finely chop the chives. Put everything in a bowl. Add the mustard, mayonnaise and turmeric and mix thoroughly. Season to taste with salt.

Spread the vegan egg mayo salad on 4 slices of bread and top each with 2 pinches of Egg Topping.
