    passata
  • 1 tbsp
    brown sugar
  • 1 tbsp
    apple cider vinegar
  • 1 tbsp
    Worcestershire sauce
  • 1 tsp
    mustard (smooth or grainy)
  • 500 ml
    vegetable stock
  • 4
    thick slices of sourdough
  • 2 tbsp
    butter
  • salt, pepper

Peel and finely dice the onion and garlic. Heat a little oil in a large saucepan over medium heat, then sauté the onion and garlic until softened and translucent.

Stir in the tomato puree and cook for a minute. Add the passata, brown sugar, apple cider vinegar, Worcestershire sauce and mustard, stirring well. Pour in the vegetable stock.

Drain the white beans and add them to the sauce. Simmer on medium heat for about 20 minutes, until the sauce thickens and the beans absorb the flavours. Season with salt and pepper to taste.

While the beans are simmering, toast the sourdough slices until golden brown. Spread with butter.

Spoon the home-made baked beans over the buttered sourdough slices. Garnish with the Smoky BBQ Beans Topping and serve immediately.
