  • 2 tbsp
    olive oil
  • 50 g
    pine nuts
  • 350 g
    cherry tomatoes
  • 1
    red onion
  • 150 g
    mini mozzarella balls
  • For the dressing:

  • 2 tbsp
    olive oil
  • 1 tsp
    mustard
  • 2 tbsp
    white balsamic vinegar

Preheat the oven to 200°C (top/bottom heat) or fan 180°C.

Cut the ciabatta into 1 cm cubes. Place in a bowl with the olive oil and 2 pinches of the Tomato Mozzarella Seasoning and stir. Place the cubes on a baking tray lined with baking paper and toast in the oven for 20 minutes.

Meanwhile, toast the pine nuts in a dry pan over a medium heat for 2 minutes, stirring occasionally so that the they don’t burn. Wash the tomatoes and cut in half. Peel and finely slice the onions. Place the pine nuts, tomatoes and onion in a bowl. Drain the mozzarella and add to the bowl.

Place all the ingredients for the dressing, plus 5 pinches of the Tomato Mozzarella Seasoning, in a bowl and stir thoroughly. Pour the dressing over the salad and stir thoroughly. Add the toasted ciabatta cubes and allow to soak up the flavours for 5 minutes before serving.
