Peel and finely dice the onion and garlic. Wash and halve the cherry tomatoes. Wash the courgettes, cut off both ends, quarter lengthways and cut into bite-sized pieces. Wash the basil leaves, pat dry and chop finely.

Heat the oil in a large pan and sauté the diced onion and garlic for about 3 minutes over a medium heat. Then add the tomatoes and courgettes and fry for a further 2 minutes. Add 500 ml water and the tin of chopped tomatoes and bring to the boil.

Add the orzo and simmer the one-pot pasta for 12 minutes over a medium heat, stirring frequently. If it dries out and the orzo is still not cooked, add a little more as needed.

Tear the mozzarella and fold into the pasta. Season with Pasta Allrounder, garnish with the basil, and serve.
