    water
  • 4 tbsp
    golden syrup (or corn syrup)
  • 1 tsp
    white wine vinegar
  • 50 g
    butter

Wash and thoroughly dry the apples, then remove the stems and firmly insert wooden skewers into the tops.

Place the chopped almonds in a small bowl and set aside.

In a large saucepan, gently heat the sugar, water, golden syrup, white wine vinegar and butter over medium heat. Stir occasionally until the sugar has completely dissolved.

Once the sugar has dissolved, increase the heat to high. Without stirring, let the mixture boil until it reaches 150°C (use a sugar thermometer to check). If you don’t have a thermometer, you can test the toffee by dropping a small amount into cold water – it should harden immediately and snap when bent.

When the toffee reaches the correct temperature, stir in the Speculoos Spice and remove the pan from the heat.

One by one, dip each apple into the hot toffee, tilting the pan to ensure they are fully coated. Immediately roll the apples in the chopped almonds and place them on a baking tray lined with baking paper.

Let the apples cool completely until the toffee sets and becomes firm and glossy.


Tip: Make sure to quickly roll the apples in the almonds after dipping, before the toffee hardens!
