  • 2 cloves
    garlic
  • 25 g
    fresh ginger

    Hokkaido (approx. 1 kg)
  • 2 tbsp
    coconut oil
  • 1 l
    water
  • 1 tin
    coconut milk (400 g)
  • salt
  • 1 handful
    pumpkin seeds

Peel and roughly dice the onions and garlic. Peel and finely chop the ginger. Wash the Hokkaido, cut in half with a large knife, remove the seeds and cut into dice into 4 cm cubes.

Heat the coconut oil in a large pan. Sauté the onions, garlic and ginger for 4 minutes until fragrant. Then add the pumpkin cubes and fry for a further minute. Add the water and coconut milk and simmer for 20 minutes.

When the pumpkin is soft, finely puree everything with a hand blender. Add the Thai Allrounder and season with salt to taste. Garnish with pumpkin seeds.
