1
Whisk together the flour, yeast, salt and sugar in a mixing bowl.

2
Gradually add the lukewarm water, stirring the mixture as you go. As soon as the dough comes together, knead with your hands to form a smooth and elastic dough. If the dough is too sticky, add a little more flour. Shape the dough into a ball and place it back into the mixing bowl. Cover the bowl with a clean kitchen towel and leave the dough to rise in a warm place for about an hour until it has doubled in size.

3
Place the dough on a lightly floured work surface and divide into 20–25 equal pieces. Shape each piece into a small ball. Place the dough balls into the desired shape on a baking tray lined with baking paper.

4
Leave the dough to rise on the baking tray for a further 30 minutes. After about 20 minutes, preheat the oven to 200°C.

5
Carefully brush the top of each dough ball with olive oil. Sprinkle the rolls one after the other with the different spice blends and seasonings.

6
Place the baking tray into the preheated oven and bake for 15–20 minutes until golden brown. Remove from the oven and allow to cool.

7
In the meantime, prepare the garlic butter. To do this, cut the butter into small pieces and leave to soften at room temperature.

8
Sauté the diced onions with the olive oil in a pan until translucent. Remove the onions from the heat and leave to cool.

9
Chop the parsley and mix into the butter. Season with lemon juice and the Aglio e Olio Seasoning. Add the onion and beat well until all ingredients are evenly combined.

10
Store the garlic butter in the fridge until ready to serve.
