  • For the dough:

  • 2 tsp
    JS Speculoos Spice
  • 500 g
    plain flour
  • 250 ml
    water, warm
  • 3 tbsp
    rapeseed oil
  • 1 tsp
    cinnamon sugar
  • For the topping:

  • 1 tsp
    JS Speculoos Spice
  • 400 g
    Hokkaido pumpkin
  • 150 g
    crème fraiche
  • 5 tbsp
    cream cheese
  • 2 handfuls
    chopped nuts of your choice
  • optional
    honey
  • 1 tbsp
    cinnamon sugar

For the dough, place all the ingredients in a bowl and knead with a hand mixer on low speed for 10 minutes until a smooth dough forms.

Shape the dough into 4 balls and leave to rest for about an hour, covered with a damp cloth.

Wash the pumpkin, remove the seeds and cut into very thin slices.

Mix the crème fraiche with the cream cheese and stir in the Speculoos Spice.

Preheat the oven to 250°C (top/bottom heat).

Place a ball of dough on a floured surface and roll out with a rolling pin to a thin circle about 20 cm Ø. Place on a baking tray lined with baking paper and spread with some of the crème fraiche mixture. Place a few pumpkin slices on top and bake in the oven for about 10 minutes.

Remove the tarte flambée from the oven and garnish with some cinnamon sugar, chopped nuts, the crème fraiche mixture and a little honey, if desired, and serve.

Repeat the process with the remaining dough and ingredients.
