Preheat the oven to fan 200°C.

Wash the courgettes and cut in half lengthways. Scrape out the insides with a spoon, leaving a border of about 0.5 cm. Roughly chop the scooped-out courgette. Wash and chop the tomatoes. Crumble the feta.

Mix the chopped courgette in a bowl with the feta, tomatoes, olive oil and Feta Seasoning. Fill the courgettes with the feta and tomato mixture.

Place the stuffed courgette boats onto a lined baking tray and bake in the preheated oven for 30–35 minutes until the courgettes are soft.


Tip: Alternatively, the stuffed courgettes can be wrapped in foil and cooked on the BBQ for 15–20 minutes.

Stuffed courgette boats with tomatoes and feta

These stuffed courgettes are a delicious vegetarian main or a satisfying side dish in the summer – ideal for using up that glut of courgettes from the garden or making the most of seasonal produce. You can vary the courgette filling with various veggies or cheeses – or try swapping the Feta Seasoning for Vegetable Allrounder for a more Morrocan twist.
