Preheat the oven to 200°C (top/bottom heat).

Hard-boil the egg for about 8 minutes.

Wash the courgettes and cut them in half lengthways. Scrape out the insides with a spoon, leaving a border of at least 1/2 cm), and chop coarsely. Peel and finely chop the onion and garlic. Clean the spring onions and slice into thin rings.

Wash and halve the cherry tomatoes. Mix with 1 tbsp oil and 1/2 tbsp Fish Allrounder and set aside.

Finely grate the Parmesan and shred the mozzarella into small pieces.

Heat 3 tbsp oil in a pan, add the onion and garlic and fry for about 5 minutes. Add the chopped courgette and cook off the water that comes out (about 4 minutes). Season with 3 pinches of salt.

Add the tinned tomatoes and simmer gently. Drain the tuna and add to the pan with the spring onions. Peel the cooled egg, chop finely and add to the pan. Remove the pan from the heat. Add 2 tbsp Fish Allrounder and sour cream and stir through.

Place the courgettes in a suitable baking dish and sprinkle with a little salt. Divide the tuna and tomato filling between the courgette halves and sprinkle with Parmesan and mozzarella. Dot the cherry tomatoes over the stuffed courgettes. Bake in the oven for 20 minutes.


Tip: Serve with rice or buttered new potatoes!
