Heat 1 tbsp olive oil in a large frying pan over a medium heat. Peel and crush the garlic and add to the pan. Sauté until translucent. Add the spinach and sauté until wilted. Remove from the heat and set aside.

In a large bowl, whisk the eggs well. Add the Feta Seasoning and salt and pepper to taste. Add the sautéed spinach and crumbled feta to the eggs and fold in.

Heat 1 tbsp olive oil in the same pan over a medium heat. Pour in the egg and spinach mixture and fry for 4–5 minutes until the edges start to brown and the centre is almost set.

Using a large plate, turn the tortilla over and fry on the other side for a further 3–4 minutes until golden brown.

Serve the tortilla warm.
