Beat the butter using a stand mixer until creamy.

Add the sugars to the butter and beat until the mixture is light and fluffy.

Add the egg to the butter mixture and beat again until combined.

Sieve the flour, baking powder, salt and Speculoos Spice into a separate bowl and mix well.

Add the dry ingredients to the butter mixture and mix well until a uniform dough forms.

Wrap the dough in cling film and leave to rest in the fridge for at least 1 hour.

Preheat the oven to 180°C (top/bottom heat).

Line two baking trays with baking paper.

Take the chilled dough out of the fridge and use a tablespoon to scoop out portions of dough. Shape these into balls and place them on the prepared baking trays, leaving enough space between them. Flatten the dough balls slightly and use a biscuit stamp to emboss patterns into the dough.

Carefully transfer your uncooked biscuits to your prepared baking trays

Bake in the preheated oven for around 10–12 minutes until the edges are golden brown.

Remove the cookies from the oven and leave to cool on the baking trays for 5 minutes.

Place the cooled cookies on a wire rack and leave to cool completely.
