Servings

1
Preheat the oven to 180°C (top/bottom heat).

2
Line a square baking tin (23 × 23 cm) with baking paper.

3
Roughly chop the dark chocolate and melt with the butter in a large bain-marie over a low heat. Stir occasionally, then remove from the heat.

4
Add the sugar to the melted chocolate mixture and stir well.

5
Whisk the eggs into the chocolate mixture one at a time until smooth.

6
Sieve the flour, cocoa powder, baking powder, salt and Speculoos Spice into a separate bowl.

7
Add the dry ingredients to the chocolate mixture and carefully fold in until everything is well combined.

8
Pour half of the brownie batter into the prepared baking tin and smooth it out.

9
Dollop the Biscoff spread evenly over the brownie batter and swirl through.

10
Sprinkle the crumbled digestive biscuits and Speculoos Spice over the Biscoff spread.

11
Carefully pour the remaining brownie batter over the Speculoos layer and smooth it out.

12
Place the tin in the preheated oven and bake the brownies for about 30 minutes, until a toothpick inserted into the centre comes out mostly clean but with a few moist crumbs.

13
Remove the brownies from the oven and leave to cool completely in the tin.

14
Cut the cooled brownies into square pieces and serve.
