Make a béchamel sauce. In a large frying pan, melt the butter over medium heat. Stir in the flour and cook for a few minutes. Keep stirring with a wooden spoon.

Gradually stir in the milk while continuing to stir. Cook the mixture until it thickens and becomes a smooth and creamy sauce. Season with salt, pepper and nutmeg to taste.

Shred the chicken and add along with the Chicken Seasoning. You can use any cooked chicken breast or leftovers. Mix well to incorporate the ingredients and cook for a few minutes.

Pour the entire mixture evenly onto a tray and leave to cool to room temperature. Once cool, cover with cling film and chill in the fridge for at least two hours. Ideally, leave it overnight.

Using your hands, take portions of the cooled mixture and form little cylindrical or round croquettes.

Beat the eggs in a deep dish and pour the breadcrumbs into a second dish. Dip each croquette in the beaten egg and then roll in the breadcrumbs. Make sure they are well coated.

Heat enough oil in a frying pan over a medium-high heat. Once the oil is hot, fry the croquettes until golden brown and crispy.

Remove the croquettes carefully with a slotted spoon and place them on kitchen paper to remove excess oil.

Serve the croquettes warm as a starter with a dipping sauce.
