    JS Green Pesto Mix
  • 1 kg
    medium potatoes
  • 7 tbsp
    olive oil
  • 4 tbsp
    Parmesan, grated
  • 1 1/2 tsp
    salt

Cook the potatoes in salted water for about 20 minutes. Preheat the oven to 210°C.

Place the potatoes on a baking tray lined with baking paper and squash them with the underneath of a heavy-bottomed glass.

Brush the mashed potatoes with 2 tablespoons of olive oil. Sprinkle with Parmesan and salt and roast in the oven for 25–30 minutes until the potatoes are golden and crispy.

For the pesto, mix 4 tsp Green Pesto Mix, 5 tbsp olive oil and 3 tbsp water.

Drizzle the pesto over the finished smashed potatoes and serve.
