    good-quality pork sausages (such as Cumberland or Lincolnshire)
  • 1 tbsp
    olive oil
  • 1 tbsp
    tomato puree
  • 1 tin
    chopped tomatoes (400 g)
  • 200 ml
    chicken stock
  • 1 tin
    butter beans (400 g), drained
  • salt, black pepper
  • fresh parsley, chopped (optional)

Heat 1 tablespoon of olive oil in a frying pan over medium heat. Brown the sausages for 4–5 minutes, turning until golden on all sides. Remove from the pan and set aside. In the same pan, add the chopped bacon and fry until crispy, then add the onion and garlic. Cook for 3-4 minutes until softened.

Transfer the browned sausages, crispy bacon, onion and garlic to the slow cooker. Add the sliced red and yellow peppers, diced courgette, tomato puree, chopped tomatoes, chicken stock and drained butter beans. Sprinkle in the Italian Allrounder seasoning and mix everything together until well combined.

Place the lid on the slow cooker and cook on low for 6–8 hours or on high for 3–4 hours, until the sausages are cooked through and the vegetables are tender. Stir occasionally if possible to ensure even cooking.

Season to taste with salt and black pepper. Serve the slow cooker sausage casserole hot, garnished with chopped fresh parsley if desired. This slow cooker casserole pairs wonderfully with mashed potatoes, crusty bread or a simple green salad.
