  • 1 tbsp
    tomato puree
  • 2 tins
    chopped tomatoes (800 g)
  • 100 ml
    stock (beef or vegetable)
  • 1 tin
    sweetcorn (425 g), drained
  • 1 tin
    kidney beans (425 g), drained and rinsed
  • 25 g
    dark chocolate, finely chopped
  • 10 g
    instant coffee
  • handful
    fresh coriander, finely chopped
  • 4 tbsp
    crème fraiche

Peel and dice the onion and garlic. Wash the red pepper, remove the core and seeds, then dice.

In a large pan, heat 1 tbsp of rapeseed oil over high heat. Brown half the beef mince for around 5 minutes, seasoning with salt as you go. Remove from the pan and repeat with the second half.

In the same pan, heat another tablespoon of rapeseed oil. Add the onions, pepper, and garlic, and cook for 5 minutes over medium heat until softened. Stir in the tomato paste and Chilli Con Carne Seasoning.

Add the browned beef mince and cooked vegetables to the slow cooker. Pour in the chopped tomatoes and stock. Stir well to combine.

Cover and cook on low for 6–8 hours or high for 3–4 hours. The longer cooking time on low allows the flavours to meld beautifully.

In the last 30 minutes of cooking, add the drained sweetcorn, kidney beans, dark chocolate and instant coffee. Stir to mix well and let everything warm through.

Once done, season the chilli con carne to taste. Serve garnished with fresh coriander and a dollop of crème fraiche.


Tip: Browning the meat in a pan before adding it to the slow cooker adds depth of flavour, so don’t skip this step!
