    side of salmon with skin on (about 1 kg)
  • 3 cloves
    garlic
  • 1
    lemon
  • 1 bunch
    dill
  • 2 tbsp
    olive oil
  • salt, pepper
  • pomegranate seeds to garnish

Preheat the oven to 140°C fan.

Peel and finely slice the garlic. Wash the lemon and cut into thin slices. Wash the dill, shake dry and roughly chop.

Place the salmon skin-side up on a baking tray lined with baking paper. Brush the skin with a little olive oil, then turn the salmon over.

Brush the fleshy side of the salmon with the remaining olive oil and evenly sprinkle over the Salmon Seasoning, salt and pepper.

Place the sliced garlic and lemon down the centre of the salmon, then add the chopped dill all over.

Bake the salmon in the preheated oven for 20–25 minutes until cooked through. (It will flake easily with a fork and no longer be translucent.)

Remove the salmon from the oven, leave to rest briefly before serving, and garnish with pomegranate seeds.

Baked side of salmon

A side of salmon, slow-roasted in the oven, is a spectacular dish to serve to your guests – and so much easier than you might think.
