Preheat the oven to fan 180°C.

Wash and finely chop the parsley leaves, discarding the thicker stems. Cut the fennel in half, remove the stalk and cut into strips. Wash the tomatoes, cut into quarters and dice. Wash the peppers, remove the seeds and cut into bite-sized pieces. Peel, halve and slice the onion. Wash, halve and slice the lemon. Peel and finely chop the garlic. Place the vegetables in a bowl and mix with 2 tbsp of olive oil and the Vegetable Allrounder.

Spread out 4 pieces of parchment paper and brush with a little olive oil. Season the salmon on both sides with the Salmon Seasoning. Place on the parchment paper and cover with the vegetables. Close the paper tightly over the fish. Cook the packets on a rack in the oven for 20 minutes.
