  • For the chicken:

  • 800 g
    mixed chicken pieces (drumsticks, thighs, wings)
  • 3 tbsp
    balsamic vinegar
  • 2 tbsp
    olive oil
  • 2 tsp
    black pepper (freshly ground)
  • 6 pinches
    salt

Preheat the oven to 220°C (top/bottom heat).

Place the chicken pieces in a large bowl and marinate with the remaining chicken ingredients. Leave to infuse in the fridge for 20–60 minutes.

Halve the new potatoes and place them cut-side down in a large baking tray drizzled with olive oil.

Wash and core the peppers and cut into chunks. Wash the mushrooms and cut them in half. Peel and quarter the onions. Peel and finely chop the garlic. Put the vegetables in a bowl and mix with the olive oil and the Italian Chicken Seasoning.

Tip the vegetables into the tray around the potatoes. Place the chicken on top of the vegetables and put in the oven for about 60 minutes until the chicken is golden and crispy.
