Preheat the oven to 110°C (top/bottom heat).

Chop the rosemary and thyme finely. Peel and finely chop the garlic. Season the leg of lamb thoroughly with salt and the Meat Allrounder. Then brush with the mustard and cover with the herbs and garlic.

Heat the oil in a large pan and sear the leg on all sides over a high heat. Place in a casserole dish, add the wine and stock and cook in the oven for about 3 hours without the lid.

If you have a meat thermometer, check the temperature has reached about 62°C so that the meat takes on a pinkish colour. Remove the lamb from the oven, leave to rest for at least 20 minutes, and serve thinly sliced with potatoes and greens.
