Preheat the oven to 200°C.

Peel and halve the onion. Cut the garlic bulb in half horizontally. Heat the butter in a saucepan and add the juice and zest of the lemon. Stir in the Chicken Seasoning.

Season the chicken inside and out with salt. Stuff with the onion, garlic and thyme. Brush the outside all over with the butter. Place the chicken in a roasting tin and roast in the oven for 60 minutes. Baste several times during cooking with the juices collected in the tin.

As soon as the chicken turns golden and the juices from the thigh run clear, remove it from the tin and let it rest for at least 5 minutes.
