    soy cream (vegan)
  • 1 tsp
    cider vinegar
  • 50 g
    pistachios, roughly chopped (for garnish)
  • parsley (optional, for garnish)
  • salt, pepper

Wash the red cabbage, remove the stalk and finely slice. Peel the potatoes and cut into large chunks. Peel and finely chop the onion and garlic.

In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic, cooking until translucent. Add the red cabbage and potatoes, and fry for 5 minutes.

Pour in the vegetable stock and bring the mixture to a boil. Stir in the Potato Allrounder and reduce to a simmer. Let it cook on medium heat for about 25 minutes, or until the potatoes are soft.

Using a hand blender, purée the soup until smooth and creamy. Stir in the soy cream and cider vinegar. Season with salt and pepper to taste.

Ladle the soup into bowls and garnish with chopped pistachios and fresh parsley, if desired.
