    butter
  • 2 tbsp
    flour
  • 200 ml
    full-fat milk
  • 2 tbsp
    grainy mustard
  • 4 pinches
    salt
  • 2 pinches
    freshly ground pepper

  • 8 pinches

    Comté cheese, block
  • 8 slices
    cooked ham

Melt the butter in a saucepan and add the flour. Mix with a whisk, add the milk and bring to a boil while stirring. Stir in the mustard and season with salt and pepper. Simmer for 5 minutes, stirring frequently, then cover and leave to cool.

Preheat the oven to 230°C.

Toast the brioche or slices of bread until golden brown. Cut 4 slices of the Comté and grate the remaining cheese. Spread 4 of the slices of bread with the mustard sauce and top each with a slice of cheese and 2 slices of ham. Place the remaining slices of brioche or bread on top.

Sprinkle the grated cheese on top and place in the oven for about 5 minutes until the cheese is melted. Finally, garnish each with 2 pinches of the Egg Topping.
