    yeast, fresh

  • 60 g
    cane sugar, brown
  • 5 pinches
    Pumpkin Pie Spice
  • To brush on:

  • 2 tbsp
    milk
  • For the icing:

  • 60 g
    butter, softened
  • 120 g
    icing sugar
  • 120 g
    cream cheese

For the dough, melt the butter in a saucepan over a medium heat. Add the milk and heat until lukewarm. Crumble the yeast into a bowl, add the lukewarm milk mixture, and stir until the yeast has dissolved.

Add the sugar, 1 pinch of salt, the flour and 1 pinch of Pumpkin Pie Spice. Mix the dough with the dough hooks on a hand mixer until smooth and elastic.

Cover the dough and leave it to rise in a warm place for about 30 minutes. Then knead the dough again by hand until it is shiny.

Preheat the oven to fan 220°C.

Divide the dough into 3 equal portions, roll each one out into large rectangles (about 1/2 cm thick), and brush with the softened butter.

For the filling, mix the cane sugar with 5 pinches of Pumpkin Pie Spice and sprinkle liberally over the pastry. Roll up the rectangles lengthwise and cut into slices 3 cm wide. Place the slices cut-side up a little apart from one another on a baking tray lined with baking paper, and leave to rise again for 30 minutes.

Whisk the egg with the milk and brush the cinnamon buns with it. Bake the buns for 8–10 minutes on the middle shelf.

For the topping, beat the butter with the icing sugar until creamy. Fold in the cream cheese and ice the warm cinnamon buns with the mixture.
