  • 3 pinches
    Pumpkin Pie Spice
  • 200 g
    pumpkin puree
  • 2
    eggs
  • 120 g
    plain flour
  • 3 tsp
    baking powder
  • 3 tbsp
    maple syrup
  • 1 pinch
    salt
  • For the sauce:

  • 450 g
    blackberries
  • 2 tbsp
    agave syrup

For the batter, beat all the ingredients with the Pumpkin Pie Spice in a bowl with a hand mixer until smooth.

Wash the blackberries, mix half of them in a bowl with the agave syrup and blend with a hand blender until homogeneous.

Pass the blackberry sauce through a sieve and chill until ready to use.

Heat a non-stick frying pan, drop in small dollops of the batter with a small teaspoon and cook for 2 minutes on each side over a medium heat. Remove the mini pancakes from the pan and set aside.

Put the mini pancakes into two bowls and garnish with the blackberry sauce and blackberries.


Tip: There are no limits when it comes to toppings: chocolate sauce, fruit or cocoa nibs are all great options!
