    JS Pumpkin Pie Spice
  • 200 g
    Hokkaido pumpkin
  • 175 g
    softened butter
  • 160 g
    brown sugar

    baking powder

    plain flour
  • 4 tbsp
    milk
  • For the glaze: 

  • 1 tsp
    JS Pumpkin Pie Spice
  • 100 g
    icing sugar
  • 15 ml
    water

Wash and cut the pumpkin into 5 cm cubes and cook in water for around 15 minutes until soft. Then puree with a hand blender.

 Preheat the oven to fan 190°C.

Beat the butter with the sugar until light and fluffy. Beat in the eggs one at a time. Whisk the flour, salt, baking powder and Pumpkin Pie Spice together in a separate bowl, then stir into the wet ingredients with the milk. Fold in the pumpkin puree. Do not overmix.

Line a 12-cup muffin tray with cupcake cases and divide the batter evenly between them. Bake for about 25 minutes, then leave to cool.

Mix together all the ingredients for the glaze and spread over the cooled muffins.
