    water

    jam sugar (2:1)

Wash the Hokkaido, halve, core and cut into 3 cm cubes. Wash, quarter and core the apples and cut into 3 cm cubes. Wash the oranges and lemon and finely grate the zest, then squeeze out the juice. Peel and grate the ginger.

Put everything except the jam sugar and Speculoos Spice into a large saucepan and cook over a medium heat for about 25 minutes (until the pumpkin is soft).

Add the Speculoos Spice and puree until very fine. Add the jam sugar and simmer according to the packet instructions.

Finally, pour the pumpkin jam into clean, hot-washed jam jars.
