Preheat the oven to 120°C.

Smear the pork neck with 1 tbsp barbecue sauce and mustard and season all over with the Texas BBQ Mix. Place in the oven and cook for 7 hours until the meat is tender. After 3 hours, tent the meat with aluminium foil, adding the apple cider vinegar to the tray, and finish cooking. Finely shred the meat with 2 forks and put it in a pot. Add the rest of the barbecue sauce and keep warm over a low heat.

Wash the lettuce and spin dry. Wash and finely slice the tomato. Peel, halve and finely dice the onion. Mix with the mustard and mayonnaise in a bowl and season with the Texas BBQ Mix.

Cut the brioche buns in half and toast the inside. Spread the mustard mayo on the bottom and top with lettuce and tomatoes. Arrange the pulled pork on top of the lettuce. Spread the barbecue sauce on the other bun and place on top of the pork.
