Preheat the oven to fan 180°C.

Roll out the puff pastry and brush all over with half of the beaten egg. Scatter one half of the puff pastry with most of the Parmesan and Cheddar, reserving some for the top. Sprinkle 2 tsp Aglio e Olio Seasoning evenly over the cheese.

Fold the puff pastry in half over on itself like a book. Using a pizza cutter, slice the puff pastry once down the centre, then horizontally into strips about 2 cm wide.

Line a baking tray with baking paper. Twist each strip 2–3 times, then place on the tray and brush the tops with the rest of the beaten egg. Sprinkle with the remaining cheese and 1 tsp Aglio e Olio Seasoning.

Bake the puff pastry cheese straws in the hot oven for 12–15 minutes until golden brown.
