    chopped tomatoes (400 g)
  • 250 ml
    dry white wine
  • 500 g
    prawns, whole (with head and shell)
  • 200 g
    feta
  • 150 g
    green olives
  • salt, pepper
  • fresh parsley
  • lemon wedges

Peel and finely dice the onion. Peel and finely chop the garlic. Wash, deseed and finely slice the chilli.

Heat the olive oil in a large pan and sauté the onion until translucent. Add the garlic and chilli and sauté briefly.

Add the cherry tomatoes, tin of chopped tomatoes and white wine to the pan and mix everything well. Stir through the Feta Allrounder and season with salt and pepper. Simmer the sauce for about 10 minutes.

Add the prawns to the pan and mix well. Crumble the feta and add to the pan along with the olives. Cover the pan over a medium heat for 5–7 minutes until the prawns are pink and cooked through.

Sprinkle with freshly chopped parsley and serve with lemon wedges and crusty baguette.

Prawn saganaki
