For the dough, place the flour, water and yeast in a bowl and knead using a stand mixer until a smooth dough is formed that pulls away from the edge of the bowl. Add the salt just before the end.

On a slightly damp work surface, knead the dough by hand. Cover with a bowl and let it rise for 60 minutes. Punch it down, then fold the dough over itself a few times. Put the dough back in the bowl and cover with plastic wrap.

Let the dough rise at room temperature for 12 hours. Punch it down again, and then form two balls of dough and let them rise, covered, for another three hours.

Preheat the oven with the baking sheet on the highest temperature. Place the tomato passata in a bowl and season with salt and Aglio e Olio Seasoning. Peel the onion, halve it and cut it into fine strips. Peel the garlic and also cut into thin slices.

Take one ball of pizza dough and spread out thinly on a floured work surface with your hands. Top with half of the tomato sauce, and add onion and garlic. Drizzle with a tablespoon of olive oil, carefully lift onto the hot baking sheet and bake in the oven for 4–6 minutes until golden brown.

Remove from the oven and garnish with basil leaves. Repeat the process with the other dough ball.
