Preheat the oven to 180°C (top/bottom heat) or fan 160°C.

Mix the peanuts with 1 tbsp sunflower oil, spread out on a baking tray lined with baking paper and roast for 10 minutes or so until fragrant but not too dark. Leave to cool briefly, then tip into a high-sided container along with all the other ingredients for the peanut butter and blend with the hand blender to the right consistency. You can also use a food processor as long as it’s powerful enough. Place in the fridge to cool.

Peel and slice the bananas. Toast the bread, spread the with peanut butter, top with the banana slices and garnish with Cocoa Banana Porridge Spice.
