Cook the penne till al dente in plenty of salted water according to the instructions on the packet. Drain, briefly rinse with cold water and place in a large bowl.

Preheat the BBQ to 200°C.

Roughly grate the Parmesan cheese and set aside. Wash and quarter the tomatoes. Wash the cress and parsley, pat dry and chop together. Add all the ingredients to the pasta in a large bowl.

Mix the balsamic vinegar with the mustard and 5 tbsp olive oil in a small bowl to make a dressing and season with 2 pinches of Italian chicken seasoning. Toss the pasta salad with the dressing and set aside.

Marinate the chicken breasts with 1 tbsp olive oil and 4 pinches of Italian Chicken Seasoning. Then sear on the barbecue (direct heat, 200 °C) for around 2 minutes on each side. Move to cook over indirect heat for 8–10 minutes. Remove from the BBQ, leave to rest for a few minutes, then cut into thick slices. Shred these slices with two forks, and add to the pasta salad.


Tip: You can fry the chicken in a pan if you don’t want to turn on the BBQ!
