Preheat the oven to 200°C (top/bottom heat).

Mix the Parmesan with the Aglio e Olio Seasoning in a small bowl. Scrub the potatoes, cut in half and set aside.

Pour the olive oil into an ovenproof dish and toss until the whole base is completely covered. Sprinkle the Parmesan mixture evenly over the olive oil. Do not stir.

Place the potatoes cut-side down onto the Parmesan and press down firmly.

Drizzle a little more olive oil over the potatoes and sprinkle with salt to taste. Bake the potatoes in the preheated oven for 35–40 minutes until the potatoes are soft and the Parmesan is a dark golden colour.

Leave the potatoes to rest for 5 minutes to create a nice crust. Carefully break the potatoes apart with a spatula or fork and turn them over. Transfer the potatoes to a platter or serve in the oven dish.
