  • For the ketchup:

  • 1.5 kg
    tomatoes
  • 1 clove
    garlic
  • 1
    onion
  • 1 tbsp
    tomato puree
  • 100 g
    agave syrup
  • 100 ml
    white wine vinegar
  • 1 tsp
    cornflour
  • water
  • 1 pinch
    salt
  • For the fries:

  • 4 pinches
    Chips Seasoning

  • 400 g
    potatoes
  • 3 tbsp
    rapeseed oil

Wash then dice the tomatoes. Peel and dice the garlic and onion. Place in a saucepan with the tomatoes and sauté.

Add the tomato paste to the agave syrup, add the salt and simmer for about 20 minutes, stirring constantly.

Pass the mixture through a sieve and bring to the boil again with the white wine vinegar. Mix the cornflour with a little cold water to make a slurry and add to the ketchup. Bring to the boil again, then pour carefully into a sterilised bottle or preserving jar.

Preheat the oven to fan 200°C.

Peel the potatoes and cut them into sticks. Wash several times in water, dry well and marinate in the oil and Chips Seasoning.

Place the fries on a baking tray lined with baking paper and bake for about 30 minutes.
