For the filling, place the currants in a container with the raisins and brandy and let them soak for 1 hour. (For an alcohol-free version, soak in orange juice.)

For the dough, put the butter, flour, sugar and salt in a bowl. Rub together with your fingertips until crumbly. Add the water, a little at a time, and mix just until the dough comes together. Wrap in cling film and refrigerate for 60 minutes.

Peel and finely grate the apple. Mix with the raisins and currants and add the zest and juice of the orange. Add the candied orange peel and season with the Apple Cinnamon Porridge Spice. Finally, finely grate the butter and add it to the filling, stirring through.

Preheat the oven to 190°C.

Grease a 12-cup muffin tin with butter. Roll out the dough on a floured work surface to a thickness of about 3 mm. Cut out circles with a 10 cm fluted cookie cutter and place in the muffin tin. Fill with 1 tablespoon of the filling. Cut out stars or any other shapes you fancy from the leftover dough and place them over the filling. Beat the egg and brush the pastry. Bake in the oven for 20–25 minutes until golden brown.


Tip: Dust with icing sugar just before serving.
