Put the kettle on and pour enough boiling water over the tomatoes in a bowl to completely cover them. After about 5 minutes, remove them carefully from the water and then peel and dice them.

Wash the green peppers, remove the seeds and dice into small pieces.

Peel and finely chop the onion.

Heat the olive oil in a large frying pan over a medium heat. Add the chopped onions and sauté for 3–4 minutes until golden brown.

Add the diced green peppers and sauté for 2–3 minutes.

Add the chopped tomatoes, salt and Vegetable Allrounder to the pan. Stir everything together and cook a further 5–6 minutes until the tomatoes soften.

Crack the eggs into a bowl and whisk together. Pour them into the pan and stir carefully until the eggs have set but are still creamy. Top with the feta (if using) just before the eggs are set.

Finely chop the parsley and sprinkle over the menemen. Serve hot with crusty bread.
