  • For the ratatouille:

  • 6 pinches
    JS Vegetable Allrounder
  • 4 pinches
    JS Fine Rock Salt 500g
  • 1
    aubergine
  • 1
    courgette
  • 3
    carrots
  • 1
    yellow pepper
  • 1
    red pepper
  • 1
    red onion
  • 3 cloves
    garlic
  • 3 tbsp
    olive oil
  • 1 tbsp
    tomato puree
  • 500 ml
    passata
  • 1 pinch
    pepper
  • For the croutons:

  • 10 slices
    bread
  • 3 tbsp
    olive oil

Wash and finely chop the aubergine and courgette.

Peel and finely chop the carrots. Wash the yellow and red peppers, remove the seeds and chop. Peel and finely chop the onions and garlic.

Heat the olive oil in a large pan and cook the vegetables over a high heat for around 5 minutes. Stir in the tomato puree and cook for another 30 seconds.

Add the passata and bring to the boil. Season with salt, pepper and Vegetable Allrounder and simmer for 15 minutes.

Remove the crusts from the bread and cut the middles into cubes. Heat the olive oil in a frying pan and cook the bread for 5 minutes over a medium heat until crispy. Top the vegetables with the croutons and serve immediately.
