    chicken breast

    lemon
  • Some
    parsley
  • 2 tbsp

  • For the sauce:

  • 1/2
    lemon, juiced
  • 150 ml
    chicken stock (cold)
  • 1 tbsp
    cornflour

Mix the ingredients for the marinade together. Cut the chicken breast in half horizontally with a sharp knife. Pour the marinade over the chicken and place in the fridge for a few hours.

Slice the lemon thinly and finely chop the parsley.

Put 2 tbsp oil in a cast-iron pan and fry the chicken pieces over a medium heat for about 5 minutes per side until nicely browned all over.

For the sauce, mix the juice of half a lemon with the chicken stock and 1 tbsp cornflour.

Pour the stock into the pan over the chicken and add the lemon slices. Cook for 2 minutes to thicken the sauce. Add a little more cornflour if needed (first mixed into a slurry with cold water). Finally, serve sprinkled with some chopped parsley.
